What this dream usually points to (and what it doesn't)
Dream interpretation is not prediction and not diagnosis. This article separates what sleep research observes from what popular interpretation associates with the theme.
Dreaming about a hat does not predict unemployment, an argument or good luck. The scene usually reflects concerns about image, about the role you play, or about feeling (or not feeling) ready to step out and be seen. Losing a hat tends to come with worry; getting or trying on a new one, with curiosity and a wish for change.

What sleep research has observed
Science hasn't studied hats in particular, but research on continuity between waking life and dreams, reviewed by Michael Schredl in 2003, helps explain why they show up. What fills our days tends to return at night: a beach trip, a country fair, a cap left in the car, a work uniform. Everyday objects slip into dreams easily.
The same research shows that current worries also carry over into dreams. That's why a hat that disappears right before an important appointment usually comes with rushing, anxiety or fear of falling short, not with a warning about the future.
Psychoanalysis, symbols and faith: another look at dreaming about a hat
In Freud's psychoanalysis. A hat appears in one of Freud's own dreams. He followed a servant into a building, another servant said he was a respectable person, and then he was told he could leave. But he couldn't find his hat, and so he couldn't go. In his analysis, Freud saw a hidden contradiction: being allowed to leave meant being cleared, and the missing hat said "after all, you are not an honest man." He used this dream to correct his earlier claim that dreams cannot express a "no."
In Jung's psychology. Joseph Henderson, a colleague of Jung, describes in Man and His Symbols the dream of a middle-aged man who, coming back from a trip, scolded a woman for not packing black waterproof hats. Later in the dream he finds his hat again, and Henderson links that discovery to a better relationship with the anima, the inner feminine figure. Read this way, a hat can speak of protection and of how each of us covers up before the world.
In the Dictionary of Symbols. Chevalier and Gheerbrant note that a hat covers the head and therefore stands for the head and for thought, and that its role echoes that of the crown, a sign of power. In Masonic assemblies, the Master never removes his hat. The hat is also a symbol of identification: in Meyrink's novel The Golem, the hero takes on the thoughts of the man whose hat he is wearing. Changing hats, the authors write, citing Jung, means changing ideas.
Bringing both views together. Science explains that hats arrive through daily life and worries; symbols suggest they speak of identity. Asking "whose hat was it?" often opens both doors.

Dreaming about a hat in dream books
The Brazilian dream book O Livro dos Sonhos, by L. P. Baçan, gives the hat a rather gloomy reading: in life, unemployment; in love, annoyances. It's the kind of short, closed answer that popular dream dictionaries tend to offer.
Freud called this method decoding: each image has a fixed code, as in a dream book where a letter means trouble and a funeral means an engagement. In his view, everything depends on how reliable the code is, and there is no guarantee of that. A lost hat does not mean the same thing to a cowboy, a bride and someone who was just laid off.
